Delicious Lentil Wraps



The lentils, fresh vegetables, and spices in these vegan lentil wraps give them a lot of flavor. You can eat them for dinner or lunch, and they are a healthy and filling meal.

Ingredients:

  • 1 cup cooked lentils
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large whole grain tortillas
  • 1 ripe avocado, sliced

Instructions:

Put the chili powder, lime juice, diced tomatoes, red onion, cilantro, salt, and pepper in a bowl

Add the cooked lentils and mix them all together

You can heat the tortillas up in a pan or the microwave

Put about a quarter of the lentil mix on each tortilla

Put some sliced avocado on top

Cover the filling with the tortilla's sides and roll it up tight

Cut each wrap in half across the middle, then serve

Jackfruit Asada Street Tacos



These vegan street tacos are made with warm corn tortillas and jackfruit that has been seasoned with a mix of spices. They're great for a quick and filling meal!

Ingredients:

  • 2 cans young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1/4 cup vegetable broth
  • 1/4 cup soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 8 small corn tortillas, warmed
  • Toppings: chopped onions, cilantro, avocado slices, lime wedges

Instructions:

You can use your fingers or a fork to shred the jackfruit into a shredded texture

Put olive oil in a pan and heat it over medium-low heat

Shred the jackfruit and add it to the pan

Saut for two to three minutes

Mix vegetable broth, soy sauce, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, and black pepper in a small bowl with a whisk

Mix the sauces together and pour them over the jackfruit in the pan

Cook for another 8 to 10 minutes, stirring every now and then, until the jackfruit is soft and full of flavor

You can warm up the corn tortillas in a different pan or the oven

Put some of the jackfruit mixture in each tortilla

Add chopped onions, cilantro, avocado slices, and a squeeze of lime juice on top

Enjoy while hot!
