- 1 cup almond milk

Instructions:
In a mixing bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt
In a separate bowl, beat the egg and add almond milk, melted coconut oil, and vanilla extract
Mix well
Pour the wet ingredients into the dry ingredients and stir until just combined
Fold in the shredded coconut
