Fluffy Gluten-Free Pancakes with Coconut Butter and Kiwi



Enjoy these fluffy gluten-free pancakes that are made even better with fresh kiwi slices, coconut butter, and shredded coconut. This is great for a slow breakfast or brunch.

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup almond milk
  • 1 egg
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 1 ripe kiwi, peeled and sliced
  • Coconut butter for serving

Instructions:

In a mixing bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt

In a separate bowl, beat the egg and add almond milk, melted coconut oil, and vanilla extract

Mix well

Pour the wet ingredients into the dry ingredients and stir until just combined

Fold in the shredded coconut

Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil or cooking spray

Pour 1/4 cup of the pancake batter onto the skillet for each pancake

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides

Serve the pancakes hot, topped with slices of kiwi and a generous dollop of coconut butter
