Ingredients:
- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 cup buffalo sauce
- 2 cups chicken broth
- 1 cup heavy cream
- 1 lb cheese tortellini
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Green onions, chopped for garnish
- Blue cheese crumbles optional, for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the chicken dices and cook until the chicken is no longer pink
Put in the minced garlic and diced onion, and cook until the onion gets soft
Add heavy cream, chicken broth, and buffalo sauce
Use a stir to mix
Put the cheese tortellini in the pot and slowly bring it to a boil
Stirring every now and then, cook until the tortellini is soft, about 8 to 10 minutes
Add the shredded cheddar cheese and mix it in until it melts and is well mixed in
Add pepper and salt to taste
If you want, you can top it with blue cheese crumbles and chopped green onions
